I suspect it won’t show usage for the previous number once it’s cut but if you checked that usage before switching numbers then you would know the amount just before you changed, but I acquire what little knowledge I have about cyber gadgets after the fact. 
Hopefully, someone who does know for sure soon can give you a better response. 

no not vanish , meaning when i log in with the new number those will not show 

If you mean vanish off the face of the earth/universe then no- the gods(big tech)will have a record somewhere of your previous numbers usage but, not easy for you to access. 
I have an iPhone XR and when I switch to T-Mobile with a new number Apple allowed limited access to info connected to my previous number for 30 days. I would be guessing to suggest all makes, models and manufacturers do this, but why not?!
